Enzymatic hydrolysis of starch is carried out using enzymes of the class of hydrolases, a subclass of carbohydrases called amylases: a-amylase, b-amylase and glucoamylase. They differ in properties and mode of action on starch.

Amylases hydrolyze both unchanged starch grains and starch paste. The attackability of starch by amylases increases with a decrease in the size of starch grains, i.e. with an increase in their relative surface. It rises sharply when the structure of starch grains is mechanically disturbed. The action of amylases is enhanced on gelatinized starch. Therefore, in a number of branches of the food industry, for example, alcohol, the saccharification of starch with enzyme preparations is carried out only after the flour has been boiled down.

a-amylase - an enzyme that hydrolyzes a- (1-4) -glycosidic bonds within an amylose or amylopectin molecule in no particular order. As a result, products of incomplete hydrolysis of starch are formed - a-dextrins - polysaccharides of different molecular weights.

The diagram shows an installation for continuous supply of thermostable ά-amylase in the process of hydroenzyme processing of a batch at an alcohol plant with a capacity of 3000 dal /day.

The installation works as follows: the flour is fed from the collector to the dismembrator with a screw conveyor (Q=25 m3 /h, H=12.5 m.) At the same time, hot water is supplied from the collector to the dismembrator, where it, mixing with flour, enters the container for mixing ( V=10 m3). For continuous supply of the enzyme preparation of thermostable a-amylase containers (30L canister) usemetering pump DLX MF /M 2-20. A connection is established between the dosing pump and the flour screw conveyor, where, depending on the supplied amount of flour, the amount of the enzyme preparation changes. Next, the batch from the batch preparation tank is fed to the GDFO using centrifugal pumps (Q=25 m3, H=32 m). The mixing time in the cooking container is 30-40 minutes.
