The pH optimization process plays an important role in the alcohol industry. For the preparation of batches, artesian water of various pH levels is used (depending on the location of the alcohol production). Acids or alkalis are used to normalize pH values. When using acids, I mainly use sulfuric acid. In yeast generation, the optimization of the pH level is of tremendous importance, since it directly affects the rate of accumulation of yeast biomass and the rate of action of enzyme preparations.
The diagram shows an installation for supplying sulfuric acid to yeast generators at a distillery with a capacity of 3000 dal /day. The installation works as follows: acid from the collection (1m3) dosing pumpmetering pump BT MF 50-3 through the pipeline directly into the yeast generator. The feed is carried out until the pH level reaches the required value (a pH sensor is installed, which is connected to the dosing pump). After reaching the set pH value, the dosing pump is switched off. After accumulating the required amount of biomass, the production yeast by a centrifugal pump (Q=12.5 m3, H=32 m) are fed into the fermentation apparatus.
